2 oz pimento jar

½ c. olive oil

½ c. white wine vinegar

3 Tbsp. fresh parsley

3 Tbsp. green onion

3 garlic cloves (crushed or chopped)

1 tsp. sugar

1 tsp. dried basil

½ tsp. salt and pepper

cream cheese

cheddar cheese (mild, medium, or sharp….your preference).

Put cream cheese in freezer for 15 minutes or so… makes it easier to cut.  I cut the cream cheese lengthwise into half and then make small square slices.  I do the same with the cheddar cheese.  Alternate the cream cheese/cheddar cheese.  Mix all other ingredients and pour over cheese.  Marinate overnight in a ziploc bag. Transfer to serving dish before serving with crackers.  Recipe can be doubled as this dip is a huge hit at parties.
